Spinach & Feta Cheesy Puffs

There is nothing like a Sunday morning cup of tea accompanied by a warm ‘straight out the oven’ Cheesy Puff!  This is what my mum often treated us to as kids and is probably one of the first recipes I baked – with the help of mum, obviously!   I am not sure where this recipe originally comes from, but it is quick and easy and doesn’t seem to flop.  Today I have reduced the amount of cheddar cheese required and I have added some crumbled feta and fresh spinach instead.  They turned out great!  See the recipe below and enjoy these quick and easy tasty treats. x

Spinach & Feta Cheesy Puffs

Ingredients:

1½ cups grated cheddar cheese (or 1 cup cheddar and ½ cup crumbled feta cheese)

2 Tbsp margarine

Salt and pepper

1 cup flour

1 egg

2 tsps baking powder

Milk

½ cup spinach (optional)

Method:

  • Cream the cheese and margarine together
  • Add the egg and mix
  • Add the dry ingredients (including ½ cup spinach)
  • Add enough milk to make soft dough
  • Spoon into a muffin pan and bake at 240 degrees for 10-12 minutes
